Switching it Up!

I have absolutely been in a food rut lately.... I feel like this unavoidably happens to everyone, so today it was officially time to switch it up!

And this is what breakfast looked like....

Who Has the Late Night Munchies??

Ok this is a relatively short post, a long one will come later when I have time to update on life....
but it has occurred to me that late night munchies can be a problem....

When it is late at night, after dinner has been consumed, I crave something sweet!  I am a sweet enthusiasts, but I am picky about preparation, flavor, taste, texture.  If it's not perfect I probably won't eat it... What's the point?... thats why I don't like candy all that often, it is too artificial for me....

anyways, back to late night munchies!...

As I was saying, I crave something to round out my sweet tooth, that is satisfying, and in a perfect world "wholesome."

My newest late night resort, a little thing I am calling ... CHOCO CRUNCH!


(aka: masses of fiber cereal are coated in a delicious chocolate, marshmallow, peanut butter shell!)


... it's fiber rich = satiety
... it's sweet = craving satisfaction
... it's chocolaty = delicious!

.... so why not make it???

Here's the Recipe:

2 heaping tbs of butter (any kind will do, I used smart balance, non dairy butter will work too)
1 3/4 cup of marshmallows
1/3 cup of natural peanut butter
3/4 cup of chocolate chips
1 cup of fiber cereal (may need more as stirred)

Place butter and marshmallows in pot.


Stir, on stove top, until melted 3/4 of the way, then add peanut butter and chocolate chips.


Note: as you stir, if you do not achieve the right texture, play with the ingredients, add more butter, marshmallow, chocolate, or peanut butter, depending on how thick you like it.

Once all ingredients create a thick paste, add cereal.


Stir, and poor mix into a lined pan to cool (I put mine in the freezer, for faster results ;).


CHOCO MASS

 Once mix solidifies, break up into munchable sized pieces... enjoy!


There is no excuse not to fill your late night food baby with something super tasty!

A New Day

GOOOD MORNNNNNING!

Ahh yes the morning... ps: I am a total morning person.  No class today, but definitely have a long day of work ahead! Had to get a good breakfast in :)

(two fiber one cereals mixed together, along with strawberries, and some milk)

Now I am off!

So half of work is over and I get a nice break in between.  Time to munch on something before I go back!  Look what I just found in the freezer...


perfect thing to nibble on before I go back for my training session.

Now off for a few more hours to learn, then much more to do!

Oh Hey I'm...

....On A Mission.  That is right, I am on a mission to abide by my personal health code.  What is that???  Honestly, I know a lot of what it is, but certainly not everything.

This is exactly why I started blogging.  I want to share my food babies (aka: the food that creates my food babies) I get on a daily basis.   To make things clear, when I say, "super food baby," I am referring to the super foods that fill up my tummy. 


So I plan to embark on this blogtastic journey educating myself and educating fantabulous readers about my life/way of being and of course, my favorite super foods.




Okay, I know you probably want to know some things about me.... understandable... I wanna be legit...

This calls for a survey.... (silly, I know, but they are my favorite ways to read about people, the way somebody answers a question seems to give me the best insight to their personality).... so here it goes!


Name?
Jocelyn, Joc, Jocey, J, Jbaby, Super Food Baby... whatever you want really...

Birthplace?
A really hot desert... where I still live.  120 degree summers = not so lovable, but the mountains and fabulous hiking trails = ubber lovable!

hair color?
Currently sporting my natural brown du, with not so naturally blonde highlights, but I needed some spice.

Siblings?
Yes, older sister, younger bro, and younger step bro.  Love them all.  They teach me a lot!

Any pets?
Yes, the fattest pomeranian around, Zorro.  20lbs, for a pom, he is a big boy, but thats why we love him!

Favorite color?
Lately I am really diggin purple

Your favorite food?
Is this a fair question?? I have to pick one!  I refuse.... salmon, goat cheese, broiled cauliflower (mmmm), hummus, spinach, sushi, and DESSERT... ahhhh just a few of my favorite things...

Favorite candy?
Honestly, I do not like candy.  I know that is super weird, but I would much rather have a freshly baked chocolate chip cookie or brownie!  I am a hardcore baker.  I experiment with healthy recipes, and the traditional stuff.... love it all.  The closest love of my life that I would consider candy is CHOCOLATE, but it has to be dark, silky, and delicious!

Favorite exercise?
I am super into a barre based class I take, it really kicks my butt! I love yoga occasionally, I am obsessed with hiking, and a couple times a week I get my cardio on, sometimes in a gym, and sometimes outside, depends on the weather.  Oh, and weight lifting is cool too.

Do you like thunderstorms?
LOVE them.  In a desert, are you kidding??  I am overjoyed by rain.

Current Occupation?
Student... a college student seeking a degree, and a student seeking an instructor certification... cant wait!

Scary movies or comedies?
comedies please!

Goals?
Well, this is ever-changing, but to sum it up I hope to learn...  Learn to teach and learn to do.
